Boil the couscous with water in a pan until cooked. Cool to room temperature and transfer to a serving bowl. Add the chickpeas, tomatoes, cucumber, Medjool dates, coriander, onions, olive oil and lemon juice. Season with salt and pepper, and sprinkle with toasted paneer and almonds.
